Organic Milling wheat

Real bread continues to capture the headlines, as sales of the packaged white sliced loaf continue to fall, and artisan bakers are predicted to soon outnumber coffee shops!. Significantly, the majority of the start-ups have been set up by people in their 20’s and 30’s, encouraged by TV programmes such as The Great British Bake Off. For many of these new businesses the provenance of their flour is important, seeking both ‘English’ and ‘Organic’. On the back of this growers should be encouraged to maximise their milling wheat production and the premiums will follow. Organic milling wheat is predominantly produced using spring wheats Mulika and Paragon, however Crusoe winter wheat is a good winter option which produces a good milling sample.
