Wheat: Biscuit Wheat

Our ‘soft’ biscuit wheats are not easily replaced with imports, and so it is sometimes surprising that such a significant demand commands so small a premium.

The benchmark variety is CLAIRE due to its bold grain size and excellent dough extensibility. This is in turn complimented by very reliable field performance.

Most millers buy ROBIGUS, but variable specific weights and disease susceptibility are challenging its future. Third choice DEBEN, liked by some millers, is capable of high yields and a bold sample, but it has a weakness for lodging in the wrong conditions, and is seldom seen these days. Increasingly small inclusions of ALCHEMY are supplementing the traditional soft wheats and can command a small premium in the right area.
